By far mass transfer. I work with batch reactors, where cooling and heating for up heating, cool down and exotherm control are the most important process factors.   The next is statistics.

If I had to pick just one, it'd be mass transfer. That course ties thermo and transport together and provides the basis for many unit ops.

Technical writing and speech composition.  Without the ability to communicate, you will not be an effective process engineer.

The most useful college class was "Statistics for Experimenters" which I took in 1973.  It was taught by William G. (Bill) Hunter who had his BS and MS in Chemical Engineering and an MS plus a PhD in Statistics.  He was George Box's protege and first graduate student in 1960 when George started the Statistics Department at the University of Wisconsin-Madison.  We used the 1972 draft of Statistics for Experimenters which was finally published in 1978.  Since Bill was a chemical engineer, many of the examples were related to our profession.  The work taught me how to correlate data with the laws of thermodynamics along with transport phenomena and gave me an understanding of the variability of material and energy balances.
